Since the age of 10 I have worked in bar’s learning to pour pints in my parents friends pub in South Wales (rules were a tad more relaxed back then) and decided age 15 that I wanted to own my own restaurant by the time I was 30 and although I didn’t know it would be called Grill 48 I pretty much had everything else planned in my head.

After being told by my careers advisor that I wouldn’t be clever enough to go to uni I made it my first goal to not only get there, but to pass with honours. So in 1998 I went to Fife College and achieved my HNC and HND and then moved onto Queen Margaret University and achieved my International Hospitality Management Honours Degree. OK it wasn’t the best mark but I past and did what I set out to do.

So having worked hard over the years at the Laurel Bank in Markinch (now Drummonds), then moving to Dunfermline Athletic Football Club and then Keavil House Hotel I felt I had gained enough experience and knowledge of how to run a restaurant and in 2010 myself and my parents decided to take the plunge and take over the building on East Port.

My 30th Birthday was on the 28th April 2011 and we opened Grill 48 on the 27th May 2011, so I believe that I achieved my ambition as we were working on the restaurant over my birthday. In the last 7 years TeamG48 have worked hard and have achieved a fair few awards along the way, including Best Independent Restaurant in Fife, Taste our Best, and World Host.

So what’s next for Grill 48, well I have struggled over the past few years to find what’s next as achieving such a big life goal doesn’t happen every day. However I have found that I am a good organiser and have lots of entrepreneurial ideas which have come in handy with some of the local tourism groups. I am now the chair of the Filming Fife group and the Dunfermline and West Fife Local Tourism Association. These roles allow me to develop skills and get to know what is going on in Dunfermline, Fife and Scotland to keep me a step ahead. I have met some great people and look forward to working with them to welcome more people to Fife.

Grill 48’s future is strong and we look forward to bringing you more unique events in the very near future as well as continuing to provide fantastic customer service and great locally sourced seasonal food.
